Your intro sounds exactly like me right now and I did a double-take thinking "when did I post that" - anyways, I found the same recipe on the back of the flaxseed meal and have been making it every week ever since. My health-nut husband LOVES these muffins. Like Megan I do some substituting of my own (wheat bran instead of oat bran; 1/2 C brown sugar instead of 1 C; I also leave the peel on the apples; I use walnuts for the nuts and Egg Beaters instead of real eggs. I also have to cook the muffins for over 20 minutes and ended up with more than 15 muffins (I think 19 large ones).
