Don't be afraid to add a little extra spice. If you don't have pumpkin pie spice you can add in some cinnamon, ginger, nutmeg and cloves. That works as well.<br />Coconut milk usually lasts a few days to a week so I'd assume it would be the same for the coconut whipping cream.
