Okay, so I'm on a bit of a health kick right now. I try to find recipes that are yummy but also healthy. When I was at the grocery store, I purchased flaxseed meal and wheat germ not really knowing how I would use them. I found this recipe on the back of the flaxseed meal and it turned out great!
Recipe from the bag of Bob’s Red Mill Whole Ground Flaxseed Meal
1 ½ cups unbleached white flour
¾ cup flaxseed meal
¾ cup oat bran (I substituted wheat germ)
1 cup brown sugar
2 tsp. baking soda
1 tsp. baking powder
½ tsp. salt
2 tsp. cinnamon
1 ½ cups carrots, shredded
2 apples, shredded (I left the peel on)
½ cup raisins (optional)
1 cup nuts (I used pecans)
¾ cup milk
2 eggs, beaten
1 tsp. vanilla
Mix together flour, flaxseed meal, bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl. Stir in carrots, apples, raisins and nuts. Combine milk, beaten eggs and vanilla. Pour liquid ingredients into dry ingredients. Stir until ingredients are moistened. Do not over mix. Fill muffin cups ¾ full. Bake at 350 degrees F for 15-20 minutes. Yields 15 medium muffins.
I ended up baking the muffins for around 20-25 minutes. When I made the recipe, I ended up with 24 regular sized muffins.

I've just been catching up on the great meal ideas I've missed for the last few months and came across this one. Your intro sounds exactly like me right now and I did a double-take thinking "when did I post that" - anyways, I found the same recipe on the back of the flaxseed meal and have been making it every week ever since. My health-nut husband LOVES these muffins. Like Megan I do some substituting of my own (wheat bran instead of oat bran; 1/2 C brown sugar instead of 1 C; I also leave the peel on the apples; I use walnuts for the nuts and Egg Beaters instead of real eggs. I also have to cook the muffins for over 20 minutes and ended up with more than 15 muffins (I think 19 large ones). Anyways - we LOVE these muffins and I think they are fabulous.
