My friend, Kendall, introduced me to homemade granola bars. This recipe tastes delicious and can be changed so easily depending on what you have on hand. Feel free to substitute coconut oil for butter, almond or other nut butter for the peanut butter, honey for corn syrup. Make it as healthy as you want and it will still taste delicious. I've included a link to the original recipe at the bottom of this post. This recipe includes some of the extra add-ins I use in my recipe.
You never have to buy granola bars again. Save money and make your own and know exactly what you're putting into them.
Coconut Granola Bars
3/4 cup brown sugar
2/3 cup peanut butter
1/2 cup corn syrup
1/2 cup butter
2 tsp vanilla
1 cup chocolate chips*
1/2 cup flaked coconut
1/2 cup sunflower or pumpkin seeds, shelled
1/3 cup wheat germ
1 Tbsp sesame seeds
1 Tbsp chia seeds
1 Tbsp flax seeds
3 cups old-fashioned oats
*You can use cranberries or other dried fruit in addition or in place of the chocolate chips if you'd like.
Directions:
In a large bowl, combine sugar, nut butter, corn syrup, butter and vanilla. Add the mix-in ingredients next and combine. Finally, mix in the oats at the end.
Press into two greased 9x13 inch pans. Bake at 350 degrees for 23-30 or until golden brown. Cool on wire racks. Cut into bars. Enjoy!

Banana Crumb Muffins
I found this recipe on allrecipes.com, but made some alterations based on some of the reviewer suggestions. I'm listing the recipe as I made it:
MUFFINS:
1 cup all-purpose flour
1/2 cup whole wheat flour (can make muffins with just 1-1/2 cups regular flour)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/2 tsp nutmeg
3/4 tsp cinnamon
3 ripe bananas, mashed
1/2 cup granulated sugar
1/4 cup packed brown sugar
1 egg, lightly beaten
1/3 cup vegetable oil
1 tsp vanilla extract
TOPPING:
1/3 cup packed brown sugar
2 tbsp all-purpose flour
1/4 tsp ground cinnamon
1 tbsp cold butter
Preheat oven to 375 degrees. Lightly grease 12 regular-size muffin cups or line with muffin papers.
In a large bowl, mix together flour, baking soda, baking powder, salt, nutmeg and cinnamon. In another bowl, beat together bananas, sugar, egg, oil and vanilla. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
In a small bowl, mix together brown sugar, 2 tbsp flour and cinnamon. Cut in butter with a pastry blender or two forks until mixture resembles course crumbs. Sprinkle topping over muffins and pat lightly.
Bake in preheated oven for 18-20 minutes or until a toothpick inserted into center of a muffin comes out clean.

Bran Flax Muffins
Okay, so I'm on a bit of a health kick right now. I try to find recipes that are yummy but also healthy. When I was at the grocery store, I purchased flaxseed meal and wheat germ not really knowing how I would use them. I found this recipe on the back of the flaxseed meal and it turned out great!
Recipe from the bag of Bob’s Red Mill Whole Ground Flaxseed Meal
1 ½ cups unbleached white flour
¾ cup flaxseed meal
¾ cup oat bran (I substituted wheat germ)
1 cup brown sugar
2 tsp. baking soda
1 tsp. baking powder
½ tsp. salt
2 tsp. cinnamon
1 ½ cups carrots, shredded
2 apples, shredded (I left the peel on)
½ cup raisins (optional)
1 cup nuts (I used pecans)
¾ cup milk
2 eggs, beaten
1 tsp. vanilla
Mix together flour, flaxseed meal, bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl. Stir in carrots, apples, raisins and nuts. Combine milk, beaten eggs and vanilla. Pour liquid ingredients into dry ingredients. Stir until ingredients are moistened. Do not over mix. Fill muffin cups ¾ full. Bake at 350 degrees F for 15-20 minutes. Yields 15 medium muffins.
I ended up baking the muffins for around 20-25 minutes. When I made the recipe, I ended up with 24 regular sized muffins.

Cinnamon Pecans
I made these for Christmas presents last year and everyone loved them. They're easy to make and taste delicious!! For a nice gift idea, decorate a pretty jar or tin and add the nuts when they're cool.
INGREDIENTS
• 1 egg white
• 1 tablespoon water
• 1 pound pecans
• 3/4 cup white sugar
• 1 teaspoon ground cinnamon *
• 1 teaspoon salt
DIRECTIONS
1. Preheat oven to 250 degrees F (120 degrees C).
2. In a large bowl, beat egg white with water until frothy. Stir in pecans and mix to coat. Combine sugar, cinnamon and salt and stir into pecan mixture. Spread on a baking sheet.
3. Bake in preheated oven 1 hour, stirring every 15 minutes. Cool on wax paper. Store in an airtight container.
*I tend to put double or triple the amount of cinnamon in. Just add as much as you’d like. I also found that it’s best to bake it in a glass baking dish because it makes it easier to stir without shoving pecans off into the stove.
